It’s the story of an everlasting love affair, Dieter Koschina and the Atlantic Ocean. Our proximity to the abundant riches of the sea and Portugal’s excellent produce has provided a constant source of inspiration for Chef Koschina, ever since he set foot in Vila Joya’s kitchen in 1991.
His cuisine has been described as “refreshingly straightforward, yet full of flavour and of the moment”. With a focus on light and fresh dishes, he is a craftsman of flavours, aromas and the natural taste of the produce. Once he’s discovered the right balance of ingredients and flavour, he only then considers presentation, which is no less impressive.

Chef Dieter Koschina
In 1991, Dieter Koschina came from Austria to the Algarve and laid the foundation for his mastery and Vila Joya’s fame. Earning his first Michelin star in 1995, and second in 1999, Chef Koschina and his team have defined Vila Joya as a culinary gem of the world that it is today. Together with his Executive Chef Stefan Langmann, Chef Koschina creates a new menu every day. He once jokingly named his approach “John Wayne Style” due to the fact that some of his dishes are created with such spontaneity and precision, as if they were well aimed shots from the hip of the ‘Duke’ himself. However, we think, “Peter Pan meets Einstein“ would be an equally fitting description.
Everyday Chef Koschina sets himself the challenge to start from scratch – his tools: ingenuity, curiosity, enthusiasm, unparalleled talent and the highest craftsmanship.

Book a Michelin star lunch or dinner
We are opening Restaurant Vila Joya in a more intimate way. Our biggest table size in the Michelin restaurant is for 6 people. For lunch and dinner, we serve Chef Dieter Koschina’s Favorites, which consists of four courses. The price is 250 euro, excluding drinks. We also serve our daily changing Signature menu – at lunch time only – for 250 euro, excluding drinks.

Among the world's top chefs, Dieter Koschina is singly nicknamed “Koschi” by his fans and friends. He is motivated by an almost stubborn love for ingredients and flavour. His traits of passion, curiosity and a thirst for new discoveries keep him from ever repeating himself. He once said in an interview, that “life is too short to become a good cook” — only a great one would say that.

Also from Austria and also one of a kind, Stefan Langmann is exceptional when it comes to leading his kitchen team. In a band, he would be both drummer and bassist — the rhythm section that keeps the beat and holds everything together. His love of the riches of the Atlantic and the region is impressive. He and Koschi have been known to be found looking for the perfect fish or swimming in the sea during the early hours before the work day starts.

Calm, positive and efficient. With a natural love for hospitality, Maître Paulo transforms the restaurant into a better place in this world. Just like Chef Koschina, he has been a part of the Vila Joya family for thirty years. Born into a hospitality family, Paulo Luz has an innate and keen eye for the smallest detail, great awareness for guests' wishes and the way he smiles might just make you smile too.

There are sommeliers and there is Monsieur Arnaud. He has a natural quality to create moments of joy with his deep knowledge, approachable style and excellent instinct. Calling Vila Joya home since 2007, he brings extensive experience of French Michelin restaurants and was named ‘Sommelier of the Year’ in 2012. Here, he is not only the gatekeeper of one of the best wine cellars in the Algarve and someone you can talk oenology with.

Ever had a Michelin menu on your own private terrace or brought to you in bed? Well, our rooms were designed with sophisticated comfort in mind. Creating an atmosphere that balances both welcoming and lavish.
So, if you prefer to enjoy quality food in your own space, we offer the Michelin menu and many other excellent dishes. Perhaps a cheese platter? Or a Viennese schnitzel à la Koschina (which you won’t find this good anywhere else) or simply celebrate another day on planet earth with a bottle of wine – or two.
