Just a family trip – through a rich culinary landscape

Vila Joya is renowned for its restaurants – the incredible Michelin, the so special beach shack and the grill in the garden by the pool.

Here, amidst the soulful music of the sea and the kaleidoscopic colours of summer flora, new culinary ideas bloom every day. In 2025, we were inspired to create a new restaurant within our restaurants, literally traveling from the beach to the garden and back. Chef Hiram and his team – The Flying Chefs – create for you a personal journey through the Mexican cuisine – full of uniquely mouthwatering flavours.

Hiram – Head of The Flying Chefs

Born in Guadalajara, Hiram González grew up between the western heartland and the beaches of the coast. He chose cooking as his profession because it enables him to express the different cultures, traditions and ingredients of his homeland – from north to south, from the mountains to the sea. Over the years he discovered the wonders of the Latin cuisine and combined them with the essence and traditions of the Mexican styles of cooking. In every dish he creates, one feels his passion for his home and the treasured memories which inspire his craft.

You may already know and love our dear Beach Shack…

As of end of April, every Monday and Tuesday the shack becomes the stage for The Flying Chefs. This special place is the perfect setting for the soulful creations of The Flying Chefs. Revel in the stunning vista of the ocean while enjoying a glass of champagne or Joy’s favourite, the Acacoyagua, a vibrant and utterly refreshing cocktail, created for the first ever Michelin gala in Portugal, last year in the Algarve. Then we recommend you to let Chef Hiram and his team surprise you with a meal that illustrates the extraordinary variety of Mexican cuisine.

The hidden grill in the garden

Fancy a relaxed lunch by the pool?

On Wednesdays and Thursdays, our Flying Chefs make a stop at the garden grill. The menu is flavourful as it is eclectic and celebrates the wondrous flavours of an extended holiday to Mexico. Here a rich and vibrant culinary journey awaits you!
