Vila Joya’s bar is a reflection of our namesake two star Michelin restaurant. The focus is on the pursuit of perfection utilizing classic techniques, painstaking preparations and only the most flavorful and freshest ingredients available, those suitable for the curated spirits of exceptional pedigree.

The relaxed sister of the Vila Joya Bar can be found in our beloved Beach Shack – Vila Joya Sea. The bar team creates perfect and unique cocktails to match the menus and the endless echo of the coast and the ocean.

Making the flavors shine

Nathan – Head of the Bar

Since his arrival from New York City in 2018, Nathan Otten has been intent on creating a bar program that pays homage to the gastronomical philosphy of Chef Dieter Koschina. The mantra in the bar is the same as in our kitchen – enduring and resolute: “flavour, flavour, flavour!” Every season he proves his talent and dedication. He says: “Quite likely, the first taste someone will encounter when beginning their gastronomical journey with us will be an aperitif. That experience needs to set the stage for the show that is about to begin. It is the overture to the opera.”

For Owner Joy Jung Nathans work is a true stroke of luck for Vila Joya: “His always new search for the finest flavor combinations, his attention to details and his great creativity are unique. Thanks to him and his art, we always serve the perfect cocktail to accompany our daily changing star menus. This is a wonderful gift for our guests and for us. The Michelin experience at Vila Joya, as well as our menus at our beloved Beach Shack Vila Joya Sea are thus perfectly complemented – a new complete work of art of taste.”

In our bar, we only use the best quality, the finest combination of the best, hand-picked ingredients. What makes us special: Nathan and his team not only recreate the well-known classics, but also invent new creations year after year that perfectly match our daily changing star menus. Another of our secrets is the ice in the glass. It sounds simple, but it’s an elegant part of the flavor design. Because the shapes we work with and the quality of this eternal element are perfectly matched to each individual cocktail – cube, ball or crushed.
